Vanilla Shortbread
An extremely inexpensive and terribly simple recipe based on the oh-so traditional shortbread recipe with a vanilla twist!
Time required - 50 mins (20 mins prep, 20 mins bake, 10 mins cool)
Ingredients
175g plain flour
125g unsalted butter, cubed
75g golden caster sugar, plus a little extra for sprinkling
1 teaspoon Madagascan vanilla extract
Method
1. Preheat your oven to 160C / gas mark 3. Put all your ingredients into a mixing bowl and use your hands to mix it all together until it resembles a bread-crumb like consistency. Then mould it together until it forms a solid dough.
2. On a lightly floured surface with a floured rolling pin, roll the dough out until it is the thickness of a £1 coin. Use a knife to neatly cut the dough into any shape you wish. Lay the pieces once cut onto a baking tray lined with baking paper. Cover the dough with small holes and make sure you don't go all the way to the bottom.
3. Bake in the oven for maximum 20 minutes until golden brown. Remove from the oven and allow to cool for 10 minutes before you enjoy still nicely warm with a tea.
