Soft White Chocolate Cookies





   Upon recently journeying down to London for a team bonding day, I got to thinking that there was no way on this earth I would be venturing down to our capital without a few homemade goodies in tow. What can I say, it's my thing. You can't stop it or change it - if I'm coming to visit you, I'm bringing you goodies, end of! And so I asked about as to what would really tick the taste boxes and truly appeal to the sweet tooth. The resounding response that hit me was 'white chocolate cookies'! So, a request is a request, and one has to acquiesce to the request with gusto. 

   This I thought, is a prime example of when you have little time, but you want to prepare something special for your work buddies that will universally go down well. It's so simple and equally as quick to rustle up, plus, who the hell doesn't love a good cookie? However, it has to have a lovely and soft, almost doughy consistency for it to be truly perfect, and this is the method I use...

Time needed - 15 minutes (makes up to 18 cookies)

Ingredients 

- 150g butter, softened and cubed
- 125g muscovado sugar
- 150g caster sugar
- 2 small eggs
- 1 teaspoon of vanilla extract
- 250g self raising flour
- Half a teaspoon of salt
- 200g bar of white chocolate, smashed to small pieces

Method

1. Preheat your oven to 180 degrees or gas mark 4. Put all the sugar and butter into a bowl and mix together, then add the vanilla extract and both eggs, one at a time, and gradually mix all together. After successfully doing this, add the flour a quarter at a time, then the salt, and lastly the whole bar of chocolate which you can put into a freezer bag and smash up with a rolling pin in advance.

2. Roll into even sizes of about the size of a walnut. One by one, place them on a wire rack covered in baking paper. Make sure then you bake them for no longer than 7 minutes - use your alarm on your phone, or you can purchase a good timer from most major stores such Asda or Morrisons.

3. Once done, remove from the oven and allow to cool. They may appear underdone, but don't worry, as they get into room temperature, they will stiffen slightly, however they will still have that gorgeous soft texture we want from these, and another tip - they are delicious when still warm! But warm or cool, you can't beat this addictive little snack. Enjoy!
