Rich and Creamy Cheese Sauce ASAP!




   Upon preparing a luscious evening meal last night of pasta, chicken, sliced ham, tomatoes, onions, olives, fresh and finely chopped rosemary, several large garlic cloves (I think the residents of Peru can smell my breath right now), cooked in red wine, fresh lemon juice and a generous seasoning of salt and pepper, the pinnacle moment came for me to add the sauce. Now in our house, we always, always, ALWAYS have at least one or two jars of pasta sauce to quickly add to the feast du jour. 

This evening told of a different tale. 

Cupboard door open. No sauce. Shock horror! 

How do you suppose we remedy this situation and intercept an impending catastrophe?

Quick and easy cheese sauce is the answer! For two people you will need - 

- 400ml milk (any)
- 100g grated cheese (any)
- x4 tablespoons of plain flour
- 100g butter (either salted or unsalted)
- pinch of pepper and pinch of salt

   Get all ingredients into a bowl and quickly stir for a few seconds until well-combined. Then add to your meat and veg already cooking and stir in. Turn the heat as low as you can and allow it to simmer for up to 10 mins, stirring frequently, you will see it begin to form a lovely creamy and thick sauce. If you feel you need more cheese, go ahead and add a little more. When it looks like the image provided, it's ready to enjoy!
