Salmon Du Jour!

 




Ingredients

- x2 fillets of salmon

- 45g butter, either salted or unsalted and cubed

- 80g runny honey

- x5 cloves garlic, chopped (either fine or in chunks)

- juice of half a lemon, the other half slice finely 

- sea salt & pepper for seasoning 

- finely-chopped chives OR parsley (optional), 1 teaspoon

Method

1. Preheat your oven to 180 degrees fan / 200 degrees conventional / gas mark 6 and allow it to heat up for around 10 minutes. Prepare your salmon. Pop the fillets on a roll of tin foil. I used two layers for this to keep all the juice in, but you should be ok with using just one. Lay the salmon on the foil onto an oven tray. 

2. Make your sauce. Simply put your butter, honey, chopped garlic and juice of your lemon into a bowl and season with sea salt and pepper. Mix together until everything is well-blended (see pics), then drizzle over your salmon until you have fully covered it. Brush evenly over if you need to, and I would recommend you try to get all the garlic pieces to stay on top of the salmon so the flavour sinks in! Sprinkle with the chives OR the parsley but these ingredients are only optional, not essential. Season with a little more salt & pepper if you feel it requires it. Pop your slices of lemon around the sides of the salmon, then close up the tin-foil parcel securely so that no juice can escape. Pop in the oven for 18 minutes.

3. About 5 minutes before you remove the salmon from the oven, turn your grill on to heat up. When the 18 minutes is up, take the salmon out, open up the foil parcel and level it out so that the foil does not catch fire from the grill, but also none of the juice is allowed to escape. Grill it for 3 minutes to caramelize the top. Remove and enjoy!

Note: Pour the remaining juice over your salmon when on the plate or with potatoes that will nicely complement this, you CANNOT waste any of this sauce, it's far too good!
