Chicken Tortellini Soup
Serves : 4
Total time required : approx 40 minutes (10 mins for prep, 30 mins for cooking)
Ingredients
- x1 medium onion, finely chopped
- x2 tablespoons of olive oil
- x3 celery sticks, finely chopped
- x3 large carrots, finely chopped
- x4 large cloves of garlic, finely chopped
- x1 teaspoon of oregano
- a few sprigs of fresh thyme
- x2 vegetable stock pots in 2.5 pints of water
- x2 cooked chicken breasts, shredded
- 250g three-cheese tortellini
- salt & pepper to season
Method
1. Pop your chopped onions and olive oil into a large cooking pot over a medium heat, stirring continuously, for about 5 minutes.
2. Add your chopped celery, carrots and garlic cloves and continue to mix in well for another 2-3 minutes.
3. Next you will need to pop your two stock pots into 2.5 pints of boiling water in a jug at the same time you add your celery, carrots and garlic to the cooking pot and stir for about 2-3 minutes. Then add your oregano, thyme and the 2.5 pints of veg stock to the cooking pot and mix well. Leave to simmer for 8-10 minutes.
4. Lastly, add your shredded chicken, tortellini and season with salt & pepper. Continue to simmer for another 10 minutes. If it starts to boil then reduce the heat. Pop into a bowl and enjoy with one of my 'herbal high loaves' (see previous blog post). Happy souping / brothing! ;) J xx
