Roasted Yellow Courgette with Bacon, Garlic & Herbs
This would be a delicious option to accompany your 'Salmon Du Jour' (see previous blog post). We tried it with the Salmon this week to see if it works and both options compliment each other perfectly! Bacon with Salmon you ask? Of course! Trust me, this is dinnertime opulence! ;)
Ingredients
- x3 medium-sized courgettes or half of x1 huge one (home-grown is best as this came from my courgette plant, however, you can just get a pack of green courgettes from your local supermarket).
- x4 rashers of bacon (any kind will do, and you could increase it to 6 rashers if you prefer).
- x2 tablespoons of olive oil (Puglian Olive Oil from Aldi I would recommend).
- x5 large garlic cloves (optional, or less if you're not as obsessed with garlic as we are!)
- x1 teaspoon mixed herbs
- salt & pepper for seasoning
Method
All you will need to do is preheat your oven to 200 degrees fan / 220 conventional / gas mark 7 up to 15 mins before you start roasting. Get a roasting tin and add your olive oil. Chop your courgettes into cubes about 1 inch thick. Finely slice up your bacon, as fine as you like, and add both to the tin. Finely chop your garlic and also then add.
Finish my adding your herbs, salt and pepper, and give it all a good mix around in the tin, so that everything is coated in the luscious olive oil. Once done, pop in the oven for 20-25 mins on a high shelf until it is roasted nicely. Please note you can also do your salmon at the same time as this! Once done, transfer to your plate with the Salmon and Voila! Enjoy!
