Trottole with Minced Beef

 


Time required: 9 hours 20 minutes (8 hours marinating, 40 mins prep, 40 mins cook), serves 4. 

Ingredients


- 2.5 cups of trottole pasta
- 500g ground minced beef
- half cup of peas (either fresh or frozen is ok)
- 2.5 cups tomato chunks in juice
- 1.5 cups parmesan, grate & divide
- 1.5 cups grated mozerella
- a few fresh basil leaves to decorate, and some additional leaves finely chopped
- 1 teaspoon dried oregano
- 1 teaspoon thyme leaves
- 1 teaspoon rosemary leaves
- 4 large garlic cloves, finely chopped
- 1 onion finely chopped
- one courgette finely chopped
- 2 tablespoons breadcrumbs
- 2 tablespoons olive oil
- 1 tablespoon red wine
- salt & pepper to season

Method

1. Allow the minced beef to marinate in the fridge for 8 hours in the wine, oil, herbs, half the garlic, salt & pepper. 

2. Once the 8 hours is over, preheat your oven to 180 degree fan / 200 degree conventional / gas mark 6. Fry your onion, courgette and the rest of the garlic in this order for 10 mins. Add beef until browned. Add herbs and tomatoes and leave to simmer. Add the peas lastly and keep this simmering for another few minutes. 

3. Cook your trottole.  Once done, mix the pasta with the beef and sauce. Butter your cooking dish and pour the mixture in. Mix in the mozerella and half of the parmesan. Then sprinkle the breadcrumbs and then the rest of the parmesan. 

4. Bake for 40 minutes, leaving to cool for 10 minutes before serving with a hearty red wine. Mamma Mia!
