Festive Chocolate Marble and Vanilla Bundt Cake
Time required: approx 2 hours (20 mins prep, 1 hour baking, 40 mins cooling)
Ingredients
For the chocolate:
- 100g of granulated sugar
- 60g natural cocoa powder
- 90g runny honey
- 1 teaspoon of vanilla extract
For the cake batter:
- 400g of granulated sugar
- 225g unsalted butter
- x2 teaspoons of vanilla extract
- 4 large eggs
- x1 teaspoon of baking powder
- x1 teaspoon of baking soda
- 1/2 teaspoon of salt
- 380g plain flour
For decoration:
- handful of cranberries
- x1 orange sliced
- 3 cinnamon sticks
- 300g white chocolate, broken up and completely melted
Method
4. Spoon one-third of the batter into a medium bowl and add the chocolate. Stir to incorporate completely and set to one side.
5. Layer up your marble bundt cake! Spoon half of the remaining vanilla batter into the prepared bundt cake tin. Scrape the chocolate batter on top. Spread the remaining vanilla batter on top of the chocolate batter. Then with a knife you need to swirl the vanilla and chocolate layers - insert the knife into the batter and make figure of eight motions throughout the entire cake to marble the batter. You may want to sometimes dig deep to the bottom and sometimes lift up to make sure the batter really moves around. Just don’t overmix the batters, or else they will blend together instead of marbling.
6. Your festive bundt is ready to be baked! Place the pan on a baking tray covered with brown parchment paper. Bake until a skewer inserted in the centre comes out clean and the cake springs back when pressed down lightly, this can take up to 60 minutes but keep checking it as when it is golden brown it should be ready, this may take only 50 minutes. Allow the cake to fully cool to room temperate - this can take 30 to 40 minutes, and then invert onto a serving plate while still warm. If the cake doesn’t un-mold, gently slip a very thin knife between the cake and the pan all the way around to loosen it and then try again.
7. Gently melt your 300g white chocolate either in the microwave or in a dish over a pan of boiling water, this can take about 5 minutes. When completely melted and you are sure there are no lumps left, and your bundt is at room temperate, drizzle your melted chocolate all over the top. In advance of doing this, you may want to have a plan or sketch of how you want the decoration to be placed, as you'll need to pop your decoration on top as the white chocolate is setting (so it holds the bits of decoration in place). When set and decoration is done, cut yourself a slice, remove the decoration (whatever you do don't try to eat a cinnamon stick!) and enjoy with a glass of eggnog!
